Ingredients: – 4 cups mixed winter greens (such as kale, spinach, and arugula) – 1 cup roasted root vegetables (such as sweet potatoes, carrots, and beets) – 1/2 cup sliced Brussels sprout

– 1/4 cup dried cranberrie – 1/4 cup chopped pecans or walnuts, toasted – 1/4 cup crumbled goat cheese or feta cheese – 1/4 cup pomegranate arils (optional, for added sweetness and crunch) – Balsamic vinaigrette dressing

Prepare the Greens: – Wash the mixed winter greens thoroughly under cold water and pat them dry using a clean kitchen towel or salad spinner.

Roast the Root Vegetables: – Preheat your oven to 400°F (200°C). – Peel and chop the root vegetables into uniform pieces.
