Weight-Loss Cabbage Soup

Ingredients: – 1 head of cabbage, chopped – 2 large carrots, diced – 2 celery stalks, chopped – 1 onion, diced – 2 cloves garlic, minced

 In a large pot or Dutch oven, heat a little bit of olive oil over medium heat.

 Add the diced onion and minced garlic to the pot and sauté until fragrant, about 2-3 minutes.

1Add the chopped carrots and celery to the pot and cook for another 5 minutes, stirring occasionally.

 Stir in the chopped cabbage and cook for an additional 5 minutes until slightly softened.

 Pour in the diced tomatoes (with their juices) and vegetable broth. Add the dried thyme, dried oregano, salt, and pepper.

 Bring the soup to a boil, then reduce the heat to low and let it simmer for about 20-25 minutes, or until all the vegetables are tender.

Taste the soup and adjust the seasoning if necessary.
