Sautéed Spinach with Lemon, Garlic & Parmesan Goes with Everything

The thinly sliced lemons in this versatile side dish add a dressy element to sautéed spinach with garlic, but they are not there just for looks! 

When cooking larger quantities of spinach, add it in batches, letting the spinach wilt a little before adding more to avoid overcrowding the pan. 

Heat oil in a large nonstick skillet over medium heat until shimmering. Add lemon slices; cook, undisturbed, until the slices are bubbling, about 1 minute. 

Flip the slices; cook until bubbling and lightly browned on the edges, about 1 minute. Transfer to a plate, reserving the oil in the pan. 

Add garlic to the skillet; cook, stirring constantly, until fragrant, about 30 seconds. Increase heat to high; add spinach and cook, stirring often, until wilted, 3 to 4 minutes. 

Remove from heat; stir in lemon juice and pepper; top with Parmesan and the sautéed lemon slices. 

Wash the spinach leaves thoroughly and remove any tough stems. If the leaves are large, you can tear them into smaller pieces. 

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant. Be careful not to let the garlic burn. 

This sautéed spinach dish is perfect alongside grilled chicken, fish, steak, pasta, or even as a topping for pizza. It's quick to make and adds a nutritious and flavorful element to any meal. Enjoy experimenting with different variations by adding crushed red pepper flakes
