How to Turn Leftover Potato Salad into Breakfast

Potato Salad Hash: Heat a skillet over medium heat and add a bit of oil or butter. Chop the leftover potato salad into smaller pieces and add it to the skillet. Cook until the potatoes are crispy and browned, stirring occasionally.  

You can add diced onions, bell peppers, or cooked bacon for extra flavor. Serve with fried or poached eggs on top for a hearty breakfast. 

Potato Salad Omelette: Beat some eggs in a bowl and season with salt and pepper. Pour the beaten eggs into a heated non-stick skillet greased with butter or oil.

Potato Salad Breakfast Bowl: Heat up the leftover potato salad in a microwave-safe bowl or skillet until warmed through. 

Top it with a fried or poached egg and garnish with chopped fresh herbs such as chives or parsley. You can also add a dollop of Greek yogurt or sour cream for extra creaminess 

Potato Salad Breakfast Sandwich: Toast two slices of bread and spread a layer of mayonnaise or mustard on each slice.  

Place a generous portion of leftover potato salad on one slice of bread and top it with crispy bacon or ham slices. Add lettuce, tomato slices, and avocado if desired. Top with the other slice of bread to make a delicious breakfast sandwich.
