Frozen Watermelon Cocktail  

The flavour of watermelon is the one that shines out the most obviously in this frozen rum and watermelon cocktail,  

however there is a hint of mint that is present in the blend. On the other hand,   

having leftover mint syrup on hand for the purpose of producing further drinks is not only practical,   

but it is also simple to manufacture simple syrup.

2 cups seeded, diced watermelon ½ cup water 1/2 cup granulated sugar 12 fresh mint leaves plus garnish 1 cup ice 3-ounce light rum (6 tablespoons) Add ¼ cup fresh lime juice (2 limes) and garnish with wedges. 3-dash Angostura bitters  

Place watermelon equally on a parchment-lined baking sheet. Freeze for 2–12 hours until totally frozen. Simmer water and sugar in a small pot over medium heat. Simmer, stirring occasionally, for 2 minutes to dissolve the sugar.   

Remove from heat and add mint. Leave uncovered at room temperature for 30 minutes. Pour syrup through a fine-mesh strainer into a small airtight container. Cover and refrigerate for 1 hour or 2 weeks.
