Ingredients: – 2 ripe avocados, diced – 2 cups mixed salad greens (such as arugula, spinach, and kale) – 1 cup cherry tomatoes, halved – 1/2 cucumber, diced – 1/4 red onion, thinly sliced

– 1/4 cup crumbled feta cheese or goat cheese – 1/4 cup chopped fresh cilantro or parsley – 1/4 cup toasted pepitas (pumpkin seeds) or chopped nuts (such as almonds or walnuts) – Salt and freshly ground black pepper, to taste

For the Dressing: – 2 tablespoons extra virgin olive oil – 1 tablespoon lemon juice or lime juice – 1 clove garlic, minced

– 1 teaspoon honey or maple syrup – 1/2 teaspoon Dijon mustard – Salt and freshly ground black pepper, to taste
