– 1 cucumber, julienned or thinly sliced – 1/4 cup chopped scallions (green onions) – 1/4 cup chopped cilantro – 1/4 cup chopped peanuts or toasted sesame seeds (for garnish)

1. Cook the Noodles:Cook the Asian noodles according to the package instructions until al dente. Once cooked, drain the noodles and rinse them under cold water to stop the cooking process and prevent them from sticking together. Transfer the rinsed noodles to a large mixing bowl.

Prepare the Vegetables: – While the noodles are cooking, prepare the vegetables by shredding the cabbage, julienned carrots, slicing the red bell pepper, and julienning or thinly slicing the cucumber.
